Kids, being naturally curious, can make for great assistants in the kitchen. Depending on their age, maturity level and interest, children can participate in anything from choosing the best stirrer or color of bowl to seasoning meat or completing a side dish. It’s about learning responsibility, sharing moments and having fun at the same time.
One word when it comes to mashed potatoes – Instant! Granted, there’s nothing better than warm and creamy homemade mashed potatoes, but there are just times when time and resources are short and quick fix potatoes are the way to go. When it’s that time, this is one dish that’s fun and easy for the novice kid in the kitchen.
While there are likely numerous brands and versions of instant mashed potatoes out there, my local store carries (and I prefer) the Idahoan pouch mixes. You’ll find these inexpensive items in the grocery store near the boxed potato dishes and bags of stuffing (aka dressing).
How easy are these potatoes to make? Easy as pouch, bowl, water and spoon. In a bowl, heat 2 cups of water to boiling. This can be done in the microwave or on the stovetop. Of course, this step should be supervised by an adult, if not handled completely.
After the water is heated, simply add the potato mix and let the little hands stir. No funny business here. The potatoes are ready to serve and eat. However, there’s no need to stop at this step. Try spicing up the dish with your own (or the kids’ own) personal touches.
Extras
Cheese is always a winner in my house. Shredded cheeses are quick and smooth melting and add a nice punch of extra flavor. A dollop or two of sour cream can add a richness to the dish. Bits of bacon (not to be confused with the artificial Bacon Bits) are tasty. Notice all these ingredients are often added to baked potatoes.
If there are onion lovers in your household, there are some good varieties to add including green onions (scallions), red onions (purple onions) and shallots (not officially an onion), all favorites of mine.
Like your mashed potatoes a little on the chunky side? Add in a can of diced potatoes. Like a little more chunk? Get crafty and create your own version of Kentucky Fried Chicken’s Mashed Potato Bowl. These quick mashed potatoes can act as a great base for other dishes. I’ve used Idahoan potatoes in a fish cake recipe (fish cakes, like crab cakes) with great success. For some recipes, both sweet and savory, check out the Click to visit this external linkmashed potato cake recipes at cooks.com.
Did I mention? The potato leftovers store well in the refrigerator and freeze nicely, too.
