Apple Pie Pancakes!

pancakesThere’s nothing better than a stack of warm pancakes fresh off the griddle. Here’s a recipe for my original Apple Pie Pancakes with the flavor of apple pie but none of the fuss. This is inspired by a recipe entitled Click to visit this external linkCaramel Apple Pancakes which was taken from the Aunt Jemima website.

Ingredients

  • 2 cups pancake mix (opt for a “fluffy” version if it’s available)
  • 1 tsp apple pie spice
  • apspice¾ cup milk (I mix my own “skim” milk from powdered)
  • 1 egg, beaten
  • 1 to 1½ tbsp butter, lightly melted
  • ¾ cup water (½ cup for a thicker batter)

Directions

The most proper method of preparation would be to mix the dry ingredients in one bowl, the wet ingredients in another, then combine the two together. Me? I just dump them all into one bowl and call it a day. Works for me!

griddlePour and cook the pancakes by the batch until they are a light golden brown. Cooking on a non-stick griddle is probably one of the best methods. Serve warm with syrup.

This recipe yields 30 perfectly round 4″ pancakes which can be eaten immediately or frozen for later servings.
